The wine lies in the stainless steel tank on the lees for about six months and develops thereby a beautiful depth of aromatization. In the southern part of Italy, the Grillo grape is a white wine variety with great quality potential. The best wines from the Grillo grape come from the western part of Sicily, including the grapes for Lunaria MBETTATA. Fermentation takes place naturally without the use of specially bred yeasts, but exclusively with natural yeasts. This gives the wine an authentic aroma profile with wonderful nuances of citrus fruits, wild flowers and orange blossom. In the mouth, it is well structured with spicy and floral notes and a fine mineral finish.

The yeasts for this Chardonnay are specially selected in a complex process in the Maiella National Park. Each grape variety is given its own suitable yeast strain. The result is an expressive Chardonnay. The aroma of brioche and butter is slightly reminiscent of champagne. Powerful on the palate with notes of hawthorn and slightly salty minerality.
