PetNat, i.e. sparkling wine fermented to the end in the bottle, made from vines over 60 years old. Fragrant, fresh and with a tart naturalness. Spontaneously fermented, minimal sulphur, distinct rose scent. Mouthfeel rather than primary fruit.
Good with light dishes, vegetables, fish, chicken, Tofu.

and spicy, delicately tart notes of bitter orange, rhubarb, ginger and Earl Grey
give this fruity palate-pleaser a lingering finish.

Kirschig-slim Merlot nor the sulfur was added in the vineyard in the basement. Fully fermented, the wine still impresses with fruity-fresh and charming nature.
