The late-ripening grape Catarratto, almost exclusively cultivated in Sicily, straw yields to amber, charming organic wines.

Verdeca, old Greek grape variety with 30 % Fiano, gentle acidity, ripe pear and a little aromatic dried fruit, more spicy-aromatic than fruity.

Pithy, crisp rosato made from short macerated Primitivo. Wild herbs and red redcurrant on the nose, not as fruity as more common rosé wines, rather rather spicy with mouthfeel, rhubarb.
Almost universal at the table.
