Classical method is prescribed for Franciacorta in Lombardy, but as good as this 100% Chardonnay (ie, a blanc de blancs) and 24 months of lees in the bottle makes this sparkling wine so sublime and delicious.

Bottle fermented. The yeast remains in the almost completely durchgegorenen product.

A PetNat, wine with added must, with indigenous yeasts for
Frizzante was fermented. Aromas of bread crusts and apple, slightly yeasty clay.
100% Grechetto grapes, hence the refreshing bitterness. Very dry
and animating.
Goes well with fish, chicken, medium-aged cheese, as an aperitif.

juniper smell from the glass. In the mouth, the wine appears rather slender. A cool
fruit harmonises with a fine spiciness reminiscent of black tea leaves. Discreet,
