The Domaine des Soulié located 35 kilometers northwest of Béziers in the appellation of Saint-Chinian. It is since the 17th Century of family ownership. On the 25 acres of vines a wide range of grape varieties are grown: Grenache, Syrah, Carignan, Cinsault, Merlot, Pinot Noir, Malbec, Sauvignon, Marsanne and Grenache Blanc. In addition to the calcareous soils, the diversity of grape varieties and modern winemaking technology, it is above all the decades of experience in organic viticulture that characterizes the wines of the Domaine des Soulie. In the modern cellar of ambitious winemakers Remy Soulie works in a mélange of tradition and experiment with a lot of tact from individual cuvées, which he can bestow different Faßlagerungen. Mostly he uses so-called double barrels. These are as carefully constructed from finest oak timbers, as the smaller 225l comprehensive originals. The effect on the wine is moderate, since the surface of the wood in contact with the wine is comparatively lower.
